Pohe (Flattened Rice Stir-Fry)
Ingredients
- 2 cups thick poha (flattened rice)
- 1 cup finely chopped onion
- 6 green chillies
- 1 teaspoon sugar
- 1 small teaspoon lemon juice
- 2 small teaspoons salt
- 5 to 7 curry leaves
Chopped coriander leaves - 2 tablespoons grated fresh coconut
- 2 tablespoons oil
- Mustard seeds
- Asafoetida (hing)
Methods
- Rinse the poha and drain well.
- Heat oil in a pan and make a tempering with mustard seeds and asafoetida.
- Add chopped onion and sauté until one steam rises.
- Add chopped green chillies and curry leaves.
- Add the drained poha.
- Add salt, sugar, and lemon juice. Mix and stir well.
- Steam once by covering for a short while.
- Add 1 teaspoon pure ghee, stir lightly, and serve hot in a bowl.
- Garnish with chopped coriander, grated fresh coconut, and fine sev.
