Pohe (Flattened Rice Stir-Fry)

Ingredients

  • 2 cups thick poha (flattened rice)
  • 1 cup finely chopped onion
  • 6 green chillies
  • 1 teaspoon sugar
  • 1 small teaspoon lemon juice
  • 2 small teaspoons salt
  • 5 to 7 curry leaves
    Chopped coriander leaves
  • 2 tablespoons grated fresh coconut
  • 2 tablespoons oil
  • Mustard seeds
  • Asafoetida (hing)

Methods

  • Rinse the poha and drain well.
  • Heat oil in a pan and make a tempering with mustard seeds and asafoetida.
  • Add chopped onion and sauté until one steam rises.
  • Add chopped green chillies and curry leaves.
  • Add the drained poha.
  • Add salt, sugar, and lemon juice. Mix and stir well.
  • Steam once by covering for a short while.
  • Add 1 teaspoon pure ghee, stir lightly, and serve hot in a bowl.
  • Garnish with chopped coriander, grated fresh coconut, and fine sev.
